All About Potatoes
Potato or potato… no matter how you pronounce it, there can be a big difference in how you cook them. When boiling potatoes to mash, did you know many people recommend cooking them first, then peeling them after? Starchy potatoes soak up water more easily, and the peel protects them in the water and helps avoid a gummy texture from water-logged spuds. When roasting, however, the potatoes will cook much faster when cut up. Be sure to keep the size of the pieces consistent, which will help them cook at the same rate.
